However, we started The Block to see what kinds of flavors we could create and boundaries we could push. For this two year aged bourbon that means using three different corns, yellow, blue, and red. The blue corn adds a delicious sweet corn tortilla note and the red results in a wonderful peppercorn addition. Many bourbon’s will be made with the addition of wheat or rye to add depth to the corn’s sweetness.
