Mezan Trinidad 2009 is a molasses rum from Trinidad Distillers Limited. In the large distillery in Port of Spain, it has been produced in a multi-column installation. This follows a fermentation process that is unique to TDL. The distillery grows its own yeast strains, which do their work for 48 hours. When the sugars in the molasses have been absorbed by these yeasts, the wort is left to rest for a few more days to allow other aromas to develop.
