Domaine Jacques Carillon is a wine producer based in the village of Puligny-Montrachet, in Burgundy’s Cte de Beaune subregion, producing a range of wines from local and neighboring vineyards, predominantly from the local mainstay: Chardonnay. The estate has a winemaking history going back to Jehan Carillon who was producing wines in the region in 1520 of whom current owner Jacques Carillon is a descendant. The current vineyard holdings cover five hectares (12.5 acres), predominantly in Puligny. Carillon and partner Sylvia produce a range of labels including the Grand Cru Bienvenues-Btard-Montrachet as well as a number of Puligny-Montrachet premiers crus: Les Champs Canet, Les Referts and Les Perrires. Other wines include a standard Puligny-Montrachet “village” and a Saint-Aubin premier cru from Les Pitangerets. Vinification is relatively straightforward with pressing followed by a short settling time before the juice is racked to barrel. Vinification is done in oak barrels, of which up to 25 percent are new oak although this depends on the cuve. The estate should be confused with Domaine Franois Carillon, also in Puligny.
