Winter Gin a true cold weather spirit. Something that can be sipped on the rocks or hold up in a hot toddy. That desire led us to barrel aging. So, we take the Autumn Gin and rest it in brand new, charred, American white oak barrels for a minimum of six months. The oak barrel adds the amber color to the spirit as well as sweet notes like vanilla, caramel, and brown sugar. Add those notes to the clove, peppercorn, cinnamon, and allspice of the Autumn Gin recipe and the resulting Winter Gin is a true hybrid spirit that can hold up in both gin and whiskey cocktails. Use it in a hot toddy or an old fashioned with equal level of deliciousness.

Nose: A delicate aroma.

Palate: This is extremely rich and very balanced in flavour.
