This extremely unique batch was crafted by Heriberto Garca, son of don Cndido, in the hot and dry month of April 2022 with maguey from the region of Santa Luca, located in the sierra of Miahuatln. Created with nearly equal percentages in weight, this field blend contains two distinct species of wild agave, and well as another member of the Asparagaceae family, the Furcraea guerrerensis, known locally as Penca Larga. This maguey is not an agave, but has served many of the same functions historically, as a source for fiber and food in many parts of the Americas. Much like Jabaln, these Penca Larga plants are low-yielding and high in saponins, which create a tremendous amount of foam during the fermentation process.
